Mushroom Risotto

Risotto is the most famous Rice dish of Italy. Cooking risotto will need 30-40 minutes with full attention (sorry no short cut). It may take long time but the result is worth the time and effort.

Cooking instruction

Always have stock ready and warm. Usually I use 2 stoves, one for cooking and one for heating stock. You can cook with one stove but some time will be wasted for heating up the stock again in cooking pan.

You need special rice for cooking risotto. If you use other rice variety, the result may not be the same as the original.

For 1 Servings
Ingredients
1/2 cup risotto rice or short grain rice
4 cups chicken or vegetable stock
1/2 cup mushroom, cut to half
5 table spoons butter
2 table spoon olive oil
1/2 cup chopped onion
1 table spoon chopped parsley
1 table spoon chopped garlic
1 table spoon chopped spring onion
1 table spoon grated Parmesan cheese

Melt butter in pan and add olive oil. Heat under medium fire till butter is melt and well mixed with oil.

 
Add in chopped garlic and chopped onion, stir till onion is translucence. Put all chopped spring onion and parsley in pan and mix well.

 
Add rice and mix well. Stir under medium heat till rice begin to be translucence.

 

Put in one ladleful of stock to pan. Mix rice, ingredient and stock. Stir slowly and continuously till all stock is absorbed. Repeat this process with another ladleful of stock. Continue cooking by adding only one ladleful of stock each time and stir till stock is absorbed. Cook till rice is soft and thoroughly cooked. This cooking process may take up to 30-40 minutes.

With the last ladle of stock, put mushroom in and continue cook till rice all stock is absorbed.

 
Transfer rice to plate, top with grated Parmesan cheese or grounded black pepper or chopped parsley. Serve while hot.
