Rice Pudding

English pudding is well know. It is a favorite
dessert for both kids and adults.
Cooking instruction
You should use short or medium grain rice or Thai Jasmine
rice. It will give a soft and chewy texture. If you use long
grain, rice will be firmer. If you use Glutinous rice, rice will
be too sticky. |

Ingredients

short grain, medium grain or Jasmine rice |
|
1 cup |
skimmed milk |
|
1 1/2 cup |
orange juice |
|
1 |
large egg |
|
1 |
medium lemon |
|
1 table spoon |
sugar |
|
1 tea spoon |
ground cinnamon |
|
1-2 table spoon |
butter |
|
1-2 table spoon |
raisin |

Melt butter in sauce pan under medium heat. Pour in rice and
mix well. Stir under medium heat till rice is translucence. Addin
sugar, cinnamon and orange juice, mix well and heat till juice
begin to boil. Lower heat and let rice simmer for 2-3 minutes
till juice is absorbed. |

Beat egg in milk, pour into rice and mix well, heat under medium
fire till rice reboil again. Lower heat and let rice simmer till
rice is soft and creamy. Close cover, off heat and let rice set
for 2-5 minutes. Squeeze lemon on rice. Serve on bowl with raisin
topping. |
